
Recipe : Steam Fish with apple salad

Ingredients:
For Fish:
Barramundi Fish - 500-1000 gm
Lime juice - 2 tablespoons
Fish sauce - 1 tablespoon
Sesame oil - ½ tea spoon
Lemon grass - 2 stalks (Sliced)
Cilantro - 1 small stalk (Sliced)
Ginger – sliced - 2 cm (Sliced)
Ginger - 3 cloves (Sliced)
Gula Melaka – 1 tablespoon (Sliced)
Birdeyes chilies – 3 pcs (chopped)
For Kerabu Epal:
Green apple – 2 pcs (Sliced)
Red Chili - 1 pc (Sliced)
Birdeyes chilli - 2 pcs (Sliced)
Tomato - sliced - 1 pc (Sliced)
Lemon grass - 1 stalk (Sliced)
Big Onion - ½ pcs (Sliced)
Desiccated fried coconut - 1 tablespoon
Ground peanut blended - 2 tablespoons
Fish sauce - 1 tablespoon
Lime juice - 1 tablespoon
Sugar - to taste
White pepper - to taste
Methods:
- First preheat the steamer and prepare a suitable steamer plate.
- Put all the ingredients in a bowl and mix well.
- Mix with the fish and steam for 15 minutes or until the fish is cooked through.
- For kerabu (salad) - Slice the green apples (along with the skin) and soak in ice water to avoid bruising and turning colour, as well as to maintain the crunchiness.
- Prepare all the other ingredients and mix in a bowl, seasoning with sugar and white pepper.
- Finally, pour the ice water and add the apples and mix well. Serve with steamed fish. Ready to be served
