Recipe : Steam Fish with apple salad

Ingredients:                                                                     

For Fish:               

Barramundi Fish - 500-1000 gm

Lime juice - 2 tablespoons

Fish sauce - 1 tablespoon

Sesame oil - ½ tea spoon

Lemon grass - 2 stalks (Sliced)

Cilantro - 1 small stalk (Sliced)

Ginger – sliced - 2 cm (Sliced)

Ginger - 3 cloves (Sliced)

Gula Melaka – 1 tablespoon (Sliced)

Birdeyes chilies – 3 pcs (chopped)

                                                                                                                                                 

For Kerabu Epal:                                                 

Green apple – 2 pcs (Sliced)

Red Chili - 1 pc (Sliced)

Birdeyes chilli - 2 pcs (Sliced)                 

Tomato - sliced - 1 pc (Sliced)

Lemon grass - 1 stalk (Sliced)

Big Onion - ½ pcs (Sliced)

Desiccated fried coconut - 1 tablespoon

Ground peanut blended - 2 tablespoons

Fish sauce - 1 tablespoon

Lime juice - 1 tablespoon

Sugar - to taste

White pepper - to taste

                                                                                           

Methods:                                                                        


  1. First preheat the steamer and prepare a suitable steamer plate. 
  2. Put all the ingredients in a bowl and mix well. 
  3. Mix with the fish and steam for 15 minutes or until the fish is cooked through. 
  4. For kerabu (salad) - Slice the green apples (along with the skin) and soak in ice water to avoid bruising and turning colour, as well as to maintain the crunchiness. 
  5. Prepare all the other ingredients and mix in a bowl, seasoning with sugar and white pepper. 
  6. Finally, pour the ice water and add the apples and mix well. Serve with steamed fish. Ready to be served
