Recipe : Chicken Geprek

Ingredients:
For Chicken marination:
Chicken (to be cut to 4 pieces) - 1 whole chicken
Garlic (to be pounded) - 4 cloves
Lime juice - 2 tablespoons
Salt and pepper - to taste
For chicken coating:
All purpose flour (wheat flour) - 1 cup
Rice flour - 1 cup
Chili powder - 2 teaspoons
Salt and pepper - to taste
Cold water - 3 cups
Cooking oil (for frying)
For Sambal Geprek:
Red onion - 5 pcs
Garlic - 8 cloves
Red chili - 6pcs
Birdeye chili - 8pcs
Tomatoes - 3 pcs
Cashew nuts - ½ cup
Salt and sugar - to taste
Cooking oil (use back the same oil after frying the chicken) - ½ cup
Ingredients to add in the dish:
White rice
Fried tempe
Fried tofu
Ulam Ulaman (mixture of vege)
Methods:
- First cut the chicken into 4 parts, wash clean, drain with water and marinate with marinade for 1-2 hours
- Then in a large bowl, prepare the fried flour mixture by mixing wheat flour, rice flour, chili powder, salt and white pepper. Mix well.
- To fry the chicken, mix the chicken with the flour mixture and then dip it in cold water, lift and mix again into the flour mixture.
- Continue to fry in plenty of oil and heat until golden yellow and the chicken is fully cooked. Lift and drain the oil.
- To prepare the sambal, roughly cut all the ingredients and fry until fragrant. Season with enough salt and sugar.
- Lift and mash in a mortar or food blender. Leave a little rough and not too crushed.
- To serve, tap the chicken and place the sambal on top. Can be served with white rice, fried tempeh, fried tofu and side.
